Lycopene is the pigment that gives tomatoes, watermelons and some grapefruits their healthy red color. Also, lycopene has a "sparing effect" for beta-carotene: lycopene sacrifices itself to free radicals so that beta-carotene can be reserved for conversion to vitamin A.
